| 内容記述 | Rhaphanus sativus L. var. acanthiformis Makino was cultivated by water culture (mean daily temperature: 20-25℃). After seeding, the plant height reached a maximum (11±1cm) at the 6th day, and its weight reached a maximum (240士22mg) at the 8th day. Changes in vitamin C contents during growth and storage were investigated. The content of total vitamin C in seed was small in quantity (11±2mg/lOOg), but it increased rapidly at the 3rd day after seeding. The content reached a maximum (55±1Omg/1OOg) at the 6th day and then decreased gradually. The content in the cotyledon, in which photosynthesis was active, was more than that in the hypocotyl. The samples cultivated for seven days were stored at 4 and 20℃. In twelve days, the rates of total vitamin C degradation were 13% and 36%, respectively. The activity of AsA oxidase was very low. It seems, therefore, that the degradation was due to non-enzymatic oxidation. | |||||||||
