| 内容記述 | The author formerly reported a series of dietetic studies on three kinds of peas; the garden-pea (Pisum sativum), the field-pea (P. sativum var. arvense) and its hybrid (P. sativum var. arvense × P. sativum var. hortense), the latter two of which we called "Chinese peas". In the present paper, these peas were comparatively examined concerning the quantity of seed-protein measured by the Micro-Kjeldahl method as well as the degree of alkalinity in seeds determined by the Dry-ashing method. It was confirmed that seeds of the Chinese peas were apparently alkaline unlike those of the garden-pea, although the former contained a little more protein than the latter. In the degree of alkalinity, seeds of the Chinese peas which had been cultivated in Japan were identical with the original material just imported from China. Now, the Chinese peas were proved to be dietetically more appropriate for us than the garden-pea, because recently we came to have more and more animal protein, and thus to need much alkaline food. | |||||||
